The Cornell Club of Arizona, the Cornell Hotel Society – Arizona Chapter, and the Phoenix Ivy Council would like to invite you to a Happy Hour at Hearth ’61, at the new Mountain Shadows Resort in Paradise Valley.

We look forward to an evening of socializing with our fellow Ivy alumni! Guests are welcome, particularly if they’re interested in checking out the newest and most buzzed-about resort in the Valley. Inspired by desert modernism, Mountain Shadows is perfectly nestled below Camelback Mountain and Mummy Mountain. Freshly rebuilt from the ground up, this new resort incorporates echoes of its original 1959 incarnation, from the name of the restaurant to iconic breeze block by the pool. We think the resort’s modern elegance and beautiful scenery will make an excellent backdrop for our July social!

At 6:00 p.m., Cornellian Bill Nassikas, President and COO of Westroc Hospitality, will give attendees a brief introduction to Mountain Shadows Resort. You may recognize the Westroc name as they also own and manage Scottsdale’s iconic Hotel Valley Ho and Sanctuary Resort. Come learn a little more about the vision for this new resort and Bill’s experience in the hospitality industry.

The Club will provide some appetizers; additional food and beverage purchases will be on individuals’ own tabs.

Here’s a little info on where we’ll be noshing: On May 24, 1961, Paradise Valley officially became an incorporated town. Hearth ’61 honors the area’s origins by encouraging people to gather around delicious food and good times. Renowned Chef Charles Wiley presents guests with ingredient-driven cuisine, time-honored flavor pairings, and cooking styles that are rich in tradition. The food inspires creativity, featuring seasonal fare that’s delightful in its simplicity. The experience is enhanced by glass walls, a large patio surrounded by gorgeous desert scenery and The Living Room’s unimpaired views.

Highlights of the Happy Hour Menu:
• Sweet prawn ceviche with spicy cucumber gazpacho, avocado, kohlrabi 18.
• Ahi tartare with Persian cucumber, shishito peppers, shaved turnip, puffed rice 16.
• Creamy burrata with citrus-smoked beets, tender spring greens, grapefruit, pistachio 13.
• Heirloom tomato with mozzarella di bufala, basil, Maldon salt 14.
• Grilled cheese with fontina, focaccia, herb roasted tomatoes, black olive relish 14.
• Spicy queso and guacamole with tortilla chips 9.
