Four Course Wine Tasting Dinner

Cornell alumnus Piero Spada (MS Viticulture & Enology 2008) of Northern Roots Collection will educate us on cold climate wines and we’ll enjoy the wonderful culinary creations of Black Shoe Hospitality’s Chef Joe Muench.

Reception: Grilled Halloumi – cherry wood bacon, cauliflower hummus, apricot
Crispy Fried Mushrooms – hot sauce dip

Course One:
Odilon Ford – Nimbus 2016
Smoked Beet Tartar – egg cream, rye, herb flowers

Course Two: Vines & Rushes – Little White Red 2017
Grilled Fig & Arugula Salad – rosemary sugared pecans, LaClare chandoka, aged balsamic, crouton

Course Three: Vines & Rushes – Mascoutin 2017 Puff-Pastry Wrapped Pork Tenderloin – mushroom duxelle, pomme puree, grilled asparagus, perigueux sauce

Course Four: Branches – Vine Dance
Rhubarb Tart – golden raisin oat streusel, vanilla bean ice cream

A portion of the proceeds from this event will fund scholarships for Wisconsin students attending Cornell.
