A sweet future for maple products

In July, Cornell and the NYS Department of Agriculture and Markets celebrated the opening of the nation's first maple product development lab at Cornell’s Arnot Maple Research and Teaching facility. With the help of state funding, the lab will allow researchers to develop new maple products and improve existing ones, further bolstering the state's $30 million-dollar maple industry. New products in the works include maple soda, beer, wine, kombucha, chocolate, and sports drinks.
