🨠THE SUBLIME ICE CREAM MAKING LAB

Date: Sunday, October 11
Time: 2–4 p.m.
Location: Lolley’s Tasting Room, 174 Washington Street, Monument, Colorado 80132
Cost: $57 per person

A First-of-Its-Kind VIP Takeover of Lolley’s in Monument (near Colorado Springs!)

Part production-kitchen tour. Part food-science lab. Part gloriously nostalgic ice cream social.

There is ice cream—and then there is Lolley’s. We searched across our great state for the perfect partner for an inaugural ice cream making lab.

Rich, beautifully textured and almost absurdly delicious, this is sublime small-batch ice cream: the kind that stops conversation for a moment after the first spoonful.

For one unforgettable October afternoon, the Cornell Club of Colorado will take over Lolley’s lovely Tasting Room for a never-before-offered experience created exclusively for our community.

Think of it as our own pint-sized Willy Wonka factory tour—with a little Cornell food science, a custom Big Red flavor and one glorious sundae bar.

Come as a couple, bring the kids, roll solo or turn it into a family-and-friends adventure—this experience was created to delight every age.

WHAT: This isn’t a public tour or a class pulled from a menu. Shelley and Dustin are building this first-of-its-kind experience from scratch for Cornell—one charming, hands-on afternoon that may never be repeated.

The afternoon will include:

🚪🦠Go Behind the Churn: Step inside Lolley’s production kitchen for a rare look at where the magic happens.
🔬🥛 Crack the Ice Cream Code: Explore the science, artistry and delicious alchemy behind the perfect scoop.
🌀🨠Churn Like a Maker: Roll up your sleeves and take a turn on Lolley’s miniature ice cream churners (get the cameras ready!).
🎨🦠Invent a Big Red Flavor: We will select from Lolley’s bases and wildly delicious mix-ins to create our own custom Cornell flavor—then taste it soft and fresh, straight from the churn.
🥄🤯 Taste the Sublime: Sample a dreamy lineup of Lolley’s signature flavors, compare fresh-churned ice cream with classic hard scoops and create something spectacular at the sundae bar.
🔑🡠Take Over the Tasting Room: Enjoy exclusive use of Lolley’s lovely private space, reserved entirely for our Cornell community.
☀ï¸ðŸŽ¯ Play Like It’s 1955: Weather permitting, head outside for lawn games and the irresistible throwback spirit of a vintage neighborhood ice cream social.

Colorado Springs Cornellians: this one is in your backyard—and we want you there.

Just outside the city, Monument is one of Colorado’s most underrated escapes—a storybook mountain community where historic storefronts, locally owned businesses, cool alpine air and golden autumn light create a positively cinematic setting.

Come early. Wander downtown. Make an afternoon of it. This is the kind of classic Colorado weekend you’ll remember long after the final scoop disappears.

WHY: ANY PERSON. ANY STUDY. ANY SCOOP.

At Cornell, ice cream has never been merely dessert. It is memory, tradition—and serious science.
The Cornell Dairy has been part of university life since 1880, while generations of Cornell food scientists have explored the chemistry of dairy, texture, temperature and flavor. Food Science students have even carried on a beloved tradition of competing to invent original ice cream flavors.

And then there is the Cornell Dairy Bar itself: a place where countless Big Red friendships, celebrations and campus memories have been served one scoop at a time.

In Monument, we’ll pay homage to that delicious legacy by asking the same question as generations of Cornell food scientists before us:
What happens when curiosity, chemistry and a serious appetite share the same churn?

MEET THE MAKERS

After spending most of their lives in the South and Midwest, Shelley and Dustin Sapp moved their family to Colorado in 2017 and quickly fell in love with the small-town magic of Monument.

Their family’s shared ice cream obsession became Lolley’s: a deeply personal, joy-filled business built around homemade recipes and ice cream made in-house in small batches with high-quality natural ingredients—without preservatives, artificial colors or artificial flavors.

Even the name carries a little magic. Shelley and Dustin imagine their future grandchildren calling them “Lolley and Pop,” with Lolley’s kitchen becoming the place where everyone gets thoroughly spoiled. One taste suggests they’re already spoiling all of Monument.

â¤ï¸ MAKE IT A DATE—OR A FAMILY ADVENTURE

Bring your partner. Bring the kids. Invite another family. Bring the friend who always orders a second scoop.

Whether it becomes a delightfully different date or your family’s favorite October outing, this experience was made for sharing. Cornellians and guests of all ages are welcome.

🥄 CLAIM YOUR SPOON

Registration is limited to just 35 guests.
One afternoon. One custom Cornell flavor. Once all 25 spoons are spoken for, this lab is closed.
