SUMMARY:CC of Colorado: Rollinsville | Fungi\, Fermentation & Springtime Kickoff
DESCRIPTION:We’re excited (and honestly a little giddy) to kick off a brand-new gathering series — Meet Up In — celebrating the places and destinations that make the Mountain State magical\, and we can’t imagine a better place to begin than Rollinsville\, Colorado. \nJust about an hour from Denver but a world apart\, Rollinsville is one of our favorite hidden gems in Gilpin County — a place where jaw-dropping scenery\, creative energy\, and small-town soul come together. Its cinematic main street (which could easily double as the set of your favorite old Western) feels especially alive in April\, when things start to thaw\, stretch\, sprout\, and surprise. \nWhich makes it the perfect backdrop for our very first Meet Up In.\nJoin us for a Mushroom Cultivation and Cooking Workshop with Bryan of MycoMindful Mushrooms\, followed by locally crafted beer and live music next door at Howlin Wind Brewery. Spring\, after all\, is a season for growth — and this one is going to grow on you. \nWHO: Your guide to all things fungi: Bryan Greenan from MycoMindful Mushrooms\nWHAT: This hands-on workshop is a celebration of spring\, sustainability\, and seriously good food. \nTogether\, we’ll: \n\nDig into the secrets of home cultivation — learning how mushrooms grow\, thrive\, and multiply (spoiler: mycelium is magic)\nSpotlight Lion’s Mane — a springtime superstar known for its brain-boosting benefits and surprisingly craveable flavor\nCook with confidence — discovering how these extraordinarily delicious\, locally grown mushrooms shine in the kitchen\nExplore herbalism & regenerative farming — because April is all about renewal\, resilience\, and returning nutrients to the soil\n\n\nThink of it as a spring reset: learn something new\, get your hands a little dirty\, and leave inspired. After the workshop\, we’ll head next door to Howlin Wind Brewery to keep the good vibes flowing with exceptional local beer and live music — because fermentation and fungi are distant cousins\, and April afternoons deserve a proper toast. \nWHERE: Rollinsville\, CO —A mountain town with big skies\, bold creativity\, and a main street straight out of a movie\, nestled in one of Colorado’s most charming corners\n(Exact workshop at 51 Main Street)\nWHEN: Saturday\, April 18\, 2:30 – 5:00 pm (Mushroom cultivation and cooking experience.) After the mushroom experience concludes we will head over to Howlin Wind Brewery for a pay-as-you-go experience featuring exceptional beer\, a local food truck and an awesome high-energy evening of live music and camaraderie. The brewery add-on is completely optional.\nCOST: $53 per person
