Matthew Berk \u201992, BA \u201993, is the cofounder and CEO of Bean Box<\/a>, a leading online source of curated specialty coffee\u2014so it may be surprising that he doesn\u2019t drink the stuff all day long. But his single daily serving, sipped from a chipped-but-beloved Cornell mug, is something of a meditative ritual.<\/p>\n\n\n\n

He uses freshly roasted beans, grinding them on the spot with a burr grinder. He favors bottled water over tap, heating it to around 200 \u00b0F. He employs no fancy brewing gadgets\u2014just the pour-over method with a 16:1 ratio of water to coffee\u2014and drinks it black.<\/p>\n\n\n\n

\u201cI don\u2019t consider myself a coffee snob at all,\u201d says the Arts & Sciences alum, who frequented Goldwin Smith\u2019s Temple of Zeus in his undergrad days. \u201cI haven\u2019t always been in touch with coffee, although I\u2019ve always enjoyed it.\u201d<\/p>\n\n\n\n

These days, coffee is Berk\u2019s livelihood. Founded in 2014, the Seattle-based Bean Box operates in what he calls the industry\u2019s \u201cexcluded middle\u201d: the largely untapped area between giants like Dunkin\u2019 or Starbucks and local players such as Ithaca\u2019s own Gimme! Coffee.<\/p>\n\n\n\n

The high-end retailer offers beans from more than 60 independent roasters around the country and beyond, curated by an in-house expert. The business works largely on a subscription model, though it also offers gift boxes and individual products.<\/p>\n\n\n\n

Customers can either tell Bean Box their taste preferences\u2014with options like \u201clight and bright,\u201d \u201cmedium and cozy,\u201d and \u201cdark and toasty,\u201d as well as espresso, decaf, single origin, and cold brew\u2014or leave it to the curator\u2019s choice.<\/p>\n\n\n\n

Priced at around $18\u201320 per 12-ounce bag, the products are shipped directly from a supplier geographically near the recipient, so beans are optimally fresh from the roaster.<\/p>\n\n\n\n

\u201cWe try to build that freshness into everything we do; you can taste it without having a \u2018refined\u2019 palate,\u201d Berk says. \u201cIt\u2019s the difference between \u2018Oh my God, this is amazing,\u2019 and \u2018This is pretty good.\u2019 Even a few days can make a huge difference, so we build that into our model.\u201d<\/p>\n\n\n\n

Bon App\u00e9tit<\/em> recently named Bean Box the best subscription service \u201cfor never drinking the same coffee twice,\u201d while noting that its offerings come at a premium price commensurate with roasters who pay a livable wage.<\/p>\n\n\n\n

\u201cIf you have the means, get the beans,\u201d the reviewer opines. \u201cI would keep this going for years if money were no object.\u201d<\/p>\n\n\n\n

Variety<\/em> calls the company \u201ca great way to try out different beans from across the world\u201d; Wired<\/em> dubs it the top espresso subscription and praises its large selection.<\/p>\n\n\n\n

\u201cWhile a lot of the newest, trendiest coffee subscriptions lean funky and fruity and light,\u201d Wired<\/em>\u2019s critic observes, \u201cI\u2019ve found that the curation for Bean Box leans toward depth, balance, and rich chocolate or toffee notes.\u201d<\/p>\n\n\n\n

On the Hill, Berk started out studying computer science. But he eventually switched to English and comparative literature\u2014and he sees a parallel in his current m\u00e9tier.<\/p>\n\n\n\n

\u201cWe\u2019re in e-commerce, so I write code all day,\u201d he says, \u201cbut fundamentally, this is a business about connecting people and telling stories.\u201d<\/p>\n\n\n\n

As he observes: a simple cup of coffee links the drinker to a global chain of growers, pickers, importers, roasters, and others\u2014not to mention a universe of flavor profiles, origins, and brewing methods.<\/p>\n\n\n\n

We\u2019re in e-commerce, so I write code all day\u2014but fundamentally, this is a business about connecting people and telling stories.<\/p>\n<\/blockquote>\n\n\n\n

\u201cThere\u2019s meaning in every cup that you don\u2019t tend to think about,\u201d he says. \u201cAnd when you discover that world, it opens up new possibilities in your life, your habits, how you decide what goes into your body. That\u2019s a pretty magical experience.\u201d<\/p>\n\n\n\n

Distinct from many founders, Berk\u2019s current passion for coffee is a result of his business, not a motivation for launching it.<\/p>\n\n\n\n

He landed in the java field almost by accident, after a start-up he was working on\u2014a platform for peer-to-peer recommendations\u2014didn\u2019t take off.<\/p>\n\n\n\n

\u201cAt the tail end of it, we looked at our data and saw spikes that were expected, like that people were interested in consumer electronics, travel, and restaurants,\u201d Berk recalls. \u201cBut then we saw peaks in activity and engagement around some unexpected things\u2014and one of those was coffee.\u201d<\/p>\n\n\n\n

Serendipitously, that recommendations start-up had been headquartered in Seattle, the nation\u2019s epicenter of coffee culture.<\/p>\n\n\n\n

\u201cPeople were talking about coffee equipment and brands and roasters, and we thought, \u2018It must be a glitch; it must be local to Seattle.\u2019 But we discovered it was a national trend,\u201d Berk says.<\/p>\n\n\n\n

\u201cPeople were interested in having better coffee experiences, and they were thinking critically about it. And we thought, \u2018Huh; this isn\u2019t just a craze in Seattle. This is all over.\u2019\u201d<\/p>\n\n\n\n
