After a family tragedy spurred him to mine the health benefits of mushrooms, Jinhu Park \u201909 founded Korea-based Imunika<\/p>\n\n\n\n

OK, let\u2019s get something straight from the jump: the coffee that Jinhu Park \u201909 makes and sells does not<\/em> taste like mushrooms. <\/p>\n\n\n\n

Yes, it has mushrooms in it\u2014seven different varieties, in fact\u2014but they\u2019re essentially indistinguishable in the beverage itself, which has the velvety, smooth-but-complex flavor of a high-end cup of java.<\/p>\n\n\n\n

The Human Ecology alum is the founder and CEO of Imunika<\/a>, a brand based in his native South Korea that\u2019s at the intersection of two markets with passionate followings: natural wellness and premium coffee.<\/p>\n<\/div>

It also taps aspects of Park\u2019s cultural heritage, in which those fungi\u2014such as the reishi (Ganoderma lucidum<\/em>), nicknamed the \u201cmushroom of immortality\u201d\u2014have long been prized for their health properties.<\/p>\n\n\n\n

\u201cNot just in Korea, but across Asia, mushrooms are renowned for their power and potency,\u201d he says. \u201cThey were revered by kings and queens, and people would travel across mountains to collect them\u2014almost like an elixir for them to live forever.\u201d<\/p>\n\n\n\n

Through a proprietary method involving fermentation\u2014an essential aspect of the Korean diet\u2014Imunika processes the mushrooms to produce what Park describes as an especially potent version of the fungi\u2019s medicinally beneficial compound.<\/p>\n\n\n\n

Called beta-glucan<\/a>, it has been credited with a host of benefits including immune support, improved gut and heart health, and stress relief.<\/p>\n\n\n\n

The compound has also been studied for its potential ability to fight cancer\u2014properties that, due to a family tragedy, drew Park to focus on it in the first place.<\/p>\n\n\n\n

A policy analysis and management major on the Hill, Park is the eldest of three brothers, all of whom came to the U.S. for high school and college. <\/p>\n\n\n\n

Through a proprietary method involving fermentation, Imunika processes the mushrooms to produce what Park describes as an especially potent version of the fungi\u2019s medicinally beneficial compound.<\/p><\/blockquote><\/figure>\n\n\n\n

Shortly after his middle brother graduated from law school, the young man was diagnosed with an aggressive, terminal cancer and given less than a year to live.<\/p>\n\n\n\n

With conventional therapies offering no hope, the family aimed to find a treatment in traditional Korean medicine.<\/p>\n\n\n\n

The brothers and their mother\u2014a fermentation master who\u2019d learned the art from her grandmother\u2014developed a process to extract a potent form of beta-glucan using seven types of mushrooms.<\/p>\n\n\n\n

\u201cWe came together to make this very strong mushroom beta-glucan complex,\u201d Park says. \u201cBut by the time we made something, my brother couldn\u2019t take any food, and he passed away.\u201d<\/p>\n\n\n\n

Seeking a way to help people integrate the compound into their diet\u2014and access its various health benefits\u2014without having to take supplements, Park landed on something that many of us consume every day: coffee.<\/p>\n\n\n\n

For Park, it was an unlikely choice\u2014given that he\u2019d never been a fan of the stuff.<\/p>\n\n\n\n

\u201cI didn\u2019t drink coffee\u2014and I still don\u2019t drink any other<\/em> coffee,\u201d Park admits. \u201cI once asked a friend jokingly, \u2018Hey, life is already bitter. Why do you pay for something that\u2019s bitter and drink it?\u2019 But jokes aside, coffee for me is a bit too strong, and I feel jittery when I drink it. I\u2019m very sensitive to caffeine.\u201d<\/p>\n\n\n\n

I didn\u2019t drink coffee\u2014and I still don\u2019t drink any other<\/em> coffee. I once asked a friend jokingly, \u2018Hey, life is already bitter. Why do you pay for something that\u2019s bitter and drink it?\u2019<\/p>\n<\/blockquote>\n\n\n\n

While there were other mushroom coffees on the market, Park explains, they primarily comprised powdered extracts mixed with ground beans.<\/p>\n\n\n\n

His concept was to focus on the premium market, using fermentation to combine his family\u2019s potent version of beta-glucan (which they dubbed MBGC-7) with the whole beans that are essential to coffee aficionados.<\/p>\n\n\n\n

Founded in 2022, Imunika now offers two medium roasts\u2014light and dark, each priced at $45 for eight ounces\u2014using beans from Papua New Guinea.<\/p>\n\n\n\n

(A decaf version, using the Swiss water method and beans from Ethiopia, is in the works.)<\/p>\n\n\n\n

Founded in 2022, Imunika now offers two medium roasts\u2014light and dark, each priced at $45 for eight ounces\u2014using beans from Papua New Guinea.<\/p><\/blockquote><\/figure>\n\n\n\n

In July 2026, Imunika received several honors in the Asia division of the Global Coffee Awards<\/a>, including being named the overall winner for South Korea. <\/p>\n\n\n\n

<\/p>\n\n\n\n

It also won a gold medal as the top experimental single-origin espresso, lauded as \u201ctruly distinctive and beautifully crafted.\u201d<\/p>\n\n\n\n

\u201cThis cup delivered a wonderfully juicy and savoury character, with notes of fresh peach, brown sugar, anise, fennel, apricot jam, and milk chocolate,\u201d the judges observed, \u201cfinished by a delicate salted butter note.\u201d<\/p>\n\n\n\n

In terms of flavor, Park compares Imunika\u2019s offerings to Kopi Luwak, a famed Indonesian variety that can cost upwards of $600 a pound.<\/p>\n\n\n\n

Known as the world\u2019s most expensive coffee, it uses beans that have passed through the digestive systems of civet cats\u2014a process that Park says is chemically akin to Imunika\u2019s fermentation, making both \u201cvery smooth and well-rounded, with an almost silky flavor.\u201d<\/p>\n\n\n\n

Imunika was named the top experimental single-origin espresso in the Asia division of the Global Coffee Awards, lauded as \u201ctruly distinctive and beautifully crafted.\u201d<\/p><\/blockquote><\/figure>\n\n\n\n

In addition to selling on its website, Imunika is carried by Bean Box<\/a>, a high-end coffee retailer and subscription service co-founded by Matthew Berk \u201992, BA \u201993.<\/p>\n\n\n\n

The brand is also available at Korean Airlines’ in-flight store and other duty-free shops.<\/p>\n\n\n\n

Last November, Imunika was the official coffee at the 2025 edition of the Asia-Pacific Economic Cooperation (APEC) forum, held in South Korea for the first time in two decades.<\/p>\n\n\n\n

The company got some global exposure when a social media video of Japanese foreign minister Toshimitsu Motegi enjoying a cup at APEC went viral<\/a>, garnering some 4 million views, 60,000 shares, and 15,000 comments within two days.<\/p>\n\n\n\n

\u201cIt\u2019s said to be a famous brand from Korea,\u201d Motegi observes in the video. \u201cIt\u2019s quite good.\u201d<\/p>\n\n\n\n
