After teaming up with a neighbor, Marc Wallace \u201992 has helped grow District Taco from a food truck to a thriving chain<\/p>\n\n\n\n

A flourishing chain of some two dozen fast-casual eateries, District Taco<\/a> offers light Mexican cuisine based on authentic regional recipes. Most of its locations are in and around metro Washington, DC, but it also has outposts in New Jersey, Pennsylvania, and Central Florida. The most recent, in Brooklyn, opened in early 2026.<\/p>\n\n\n\n

But according to co-founder Marc Wallace \u201992<\/a>, the entire enterprise almost folded on its first day.<\/p>\n\n\n\n

In 2008, Wallace\u2014while working for the software company Symantec\u2014learned that his next-door neighbor in Virginia had been laid off from a construction job.<\/p>\n\n\n\n

A native of Mexico\u2019s Yucat\u00e1n Peninsula, Osiris Hoil had often invited Wallace to share his homemade chips, salsa, and guacamole. Now unemployed, he told Wallace about his long-held desire to open a restaurant based on his mother\u2019s recipes.<\/p>\n<\/div>

The two decided to launch a food truck together, with Wallace heading up corporate development, finances, and technology and Hoil in charge of the culinary side.<\/p>\n\n\n\n

\u201cWe rolled into downtown D.C. on that first day, ready to sell tacos,\u201d Wallace recalls. \u201cAnd within five minutes, we had like a hundred hot dog vendors around us, saying, \u2018Get out of here!\u2019\u201d<\/p>\n\n\n\n

A police officer quickly approached, telling them they couldn\u2019t operate the truck there without a permit\u2014something Wallace hadn\u2019t even considered.<\/p>\n\n\n\n

\u201cWe were very na\u00efve going into this,\u201d he recalls with a chuckle.<\/p>\n\n\n\n

Even worse: permits throughout the District had long been sold out.<\/p>\n\n\n\n

But the two regrouped, setting up shop (fully permitted) outside a busy office building in the Rosslyn neighborhood of nearby Arlington, VA\u2014and the truck soon had a line around the corner, with customers clamoring for their tacos.<\/p>\n\n\n\n

The next year, the pair opened their first restaurant. Before long, they were adding locations\u2014including in their original dream spot, downtown D.C.<\/p>\n\n\n\n

By 2023, the growing enterprise had landed on an industry magazine\u2019s annual list<\/a> of the 40 hottest fast-casual startups, which declared: \u201cDistrict Taco is the restaurant rags-to-riches story at its finest.\u201d<\/p>\n\n\n\n

As Wallace explains, the chain\u2019s offerings\u2014all freshly made\u2014are distinct from the Mexican fare broadly available in the U.S., like enchiladas, refried beans, and hard-shelled tacos.<\/p>\n\n\n\n

\u201cMexico has a bunch of different cuisines,\u201d he notes. \u201cIn the Yucat\u00e1n, it\u2019s more healthy: lighter, very lime- and garlic-forward.\u201d<\/p>\n\n\n\n

But the menu also has American influences, particularly the breakfast tacos\u2014laden with eggs, potatoes, cheese, salsa, and other toppings, and served in a warm tortilla\u2014that Wallace had adored on visits to Austin, TX.<\/p>\n\n\n\n

\u201cQuick, customizable, fresh as hell,\u201d says one Yelp review of the chain\u2019s food. \u201cWalk it off later. 4.5 stars, no regrets. Go hungry.\u201d<\/p>\n\n\n\n

On the Hill, Wallace majored in mechanical engineering and worked at Oliver\u2019s, then a popular Collegetown eatery. After graduation, he worked on rocket and satellite projects at the Virginia-based aerospace firm Orbital Sciences (now Northrop Grumman).<\/p>\n\n\n\n

After earning a master\u2019s in information systems at D.C.\u2019s George Washington University, he co-founded an Internet file-sharing company; it evolved into an online backup service that was eventually sold to Symantec\u2019s Norton division.<\/p>\n\n\n\n

Even amid District Taco\u2019s success, Wallace is still involved in tech entrepreneurship\u2014including as co-founder and CEO of Flybuy<\/a>, a platform that leverages AI for the retail, restaurant, grocery, and hospitality fields.<\/p>\n\n\n\n

As Wallace admits, when District Taco first ventured outside the D.C. area, he wasn\u2019t sure if the brand would travel well\u2014so he\u2019s been pleased to see it succeed in Philadelphia and beyond.<\/p>\n\n\n\n

In a joint offering between District Taco and a local party boat company, Wallace co-launched Cantina Cruises, a river-based \u201cfloating fiesta\u201d with tequila tastings, margaritas, chips, salsa, and more.<\/p><\/blockquote><\/figure>\n\n\n\n

In fact, he even encountered some unexpected name recognition while on vacation in Hawaii.<\/p>\n\n\n\n

\u201cI was with my family, hiking in the mountains\u2014where you often don\u2019t see anybody for like half an hour\u2014and I was wearing a District Taco shirt,\u201d he recalls. \u201cAnd we came by some people going the other way, and they shouted, \u2018District Taco!\u2019\u201d<\/p>\n\n\n\n
