\u201911 was planning <a href=\"https:\/\/barkumiko.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Kumiko<\/a>, her Japanese-inspired restaurant and cocktail bar in Chicago\u2019s high-end West Loop neighborhood, she felt strongly that the host stand where guests check in should not be in sight of the dining room\u2014even though that would mean sacrificing a table, and the revenue it could generate.<\/p>\n\n\n\n<div class=\"wp-block-media-text alignwide has-media-on-the-right is-stacked-on-mobile rkv-gutter-bottom-half\"><div class=\"wp-block-media-text__content\">\n<p>\u201cYou know the feeling when you\u2019ve just walked into a restaurant or a bar and it\u2019s cold out and you\u2019re windblown?\u201d she says. \u201cMaybe your nose is runny, and people might stare at you.\u201d<\/p>\n\n\n\n<p>Drawing on elements of Japanese design and flow, Momos\u00e9 created a small, L-shaped corridor intended to gently guide patrons from the host stand to the dining room.<\/p>\n\n\n\n<p>\u201cGuests have a moment to collect themselves, and feel good about how they look when they walk into the space,\u201d she says. \u201cThat helps bring them some calm as well\u2014and then they\u2019re more ready to relax and experience everything.\u201d<\/p>\n<\/div><figure class=\"wp-block-media-text__media\"><img loading=\"lazy\" decoding=\"async\" width=\"893\" atmosphere\u2014has been a winning one.<\/p>\n\n\n\n<p>Since opening in 2018, Kumiko has received accolade after accolade\u2014culminating in being named world\u2019s best bar (along with a separate nod for best U.S. restaurant bar) at the <a href=\"https:\/\/talesofthecocktail.org\/tales-of-the-cocktail-foundation-announces-2025-spirited-awards-winners-2\/\" target=\"_blank\" rel=\"noopener noreferrer\">19th Annual Spirited Awards<\/a>, held in New Orleans in summer 2025.<\/p>\n\n\n\n<figure class=\"wp-block-image alignwide size-large\"><img loading=\"lazy\" decoding=\"async\" culture with Midwestern hospitality.\u201d<\/p>\n\n\n\n<p>Momos\u00e9 drew on her upbringing in Japan\u2014her father is Japanese-American\u2014when she opened the establishment with two restaurateur partners.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>Kumiko is one of Chicago\u2019s most beloved (and best) dining experiences, seamlessly blending the precision of Japanese cocktail culture with Midwestern hospitality.<\/p>\n<cite><em><strong>TimeOut Chicago<\/strong><\/em><\/cite><\/blockquote>\n\n\n\n<p>Its name comes from the woodworking technique <em>kumiko<\/em>, in which intricate patterns are created by assembling thin, grooved pieces that are held in place through pressure alone.<\/p>\n\n\n\n<p>The restaurant was created around an <em>omakase<\/em>-style tasting menu for its food and paired cocktails\u2014a multicourse, chef-driven, bespoke experience using fresh seasonal ingredients. magazine in February 2017 featuring Julia Momos\u00e9 and &quot;50 Best Bars&quot;\" class=\"wp-image-65532 size-full\" srcset=\"https:\/\/alumni.cornell.edu\/cornellians\/wp-content\/uploads\/sites\/2\/2026\/02\/Chicago_mag_cover_Feb_2017.jpg 378w, https:\/\/alumni.cornell.edu\/cornellians\/wp-content\/uploads\/sites\/2\/2026\/02\/Chicago_mag_cover_Feb_2017-227x300.jpg 227w, https:\/\/alumni.cornell.edu\/cornellians\/wp-content\/uploads\/sites\/2\/2026\/02\/Chicago_mag_cover_Feb_2017-299x395.jpg 299w, https:\/\/alumni.cornell.edu\/cornellians\/wp-content\/uploads\/sites\/2\/2026\/02\/Chicago_mag_cover_Feb_2017-189x250.jpg 189w, https:\/\/alumni.cornell.edu\/cornellians\/wp-content\/uploads\/sites\/2\/2026\/02\/Chicago_mag_cover_Feb_2017-95x125.jpg 95w\" sizes=\"auto, (max-width: 378px) 100vw, 378px\" \/><figcaption>On the cover of <em>Chicago<\/em> magazine.<\/figcaption><\/figure><div class=\"wp-block-media-text__content\">\n<p>It immediately became a local favorite, even earning a Michelin star in 2019.<\/p>\n\n\n\n<p><em>TimeOut Chicago<\/em>\u2019s <a href=\"https:\/\/www.timeout.com\/chicago\/bars\/kumiko\" target=\"_blank\" rel=\"noopener noreferrer\">five-star review<\/a> noted that the elegant eatery \u201craises the bar on fine dining and delivers a superb lineup of sake- and shochu-centric sips and delicate bites imbued with Japanese flavors.\u201d<\/p>\n\n\n\n<p>Kumiko has landed on the World\u2019s 50 Best Bars list several times, held a spot on the North America\u2019s 50 Best Bars list for four consecutive years, and garnered accolades from <em>Chicago<\/em> magazine (best new bar), <em>Time<\/em> magazine (world\u2019s greatest places), and <em>Esquire<\/em> (best bars in America).<\/p>\n<\/div><\/div>\n\n\n\n<p>Momos\u00e9 has also won the Michelin Guide Chicago Exceptional Cocktails Award.<\/p>\n\n\n\n<p><em>Nihonshu<\/em>\u2014commonly known as sake\u2014is heavily featured in Kumiko\u2019s pairings, as is traditional Japanese <em>shochu<\/em> (distilled spirits), though Momos\u00e9 also crafts and promotes many non-alcoholic drinks, dubbed \u201c<a rel=\"noopener noreferrer\" target=\"_blank\" href=\"https:\/\/www.momosejulia.com\/blog\/2017\/10\/26\/spiritfree\">spiritfrees<\/a>.\u201d<\/p>\n\n\n\n<p>Some of her recipes and techniques are gathered in her 2021 cookbook, <a href=\"https:\/\/www.goodreads.com\/book\/show\/59585454-the-way-of-the-cocktail?from_search=true&amp;from_srp=true&amp;qid=gP7D8DkTQK&amp;rank=1\" target=\"_blank\" rel=\"noopener noreferrer\"><em>The Way of the Cocktail<\/em><\/a>, which won a James Beard Award.<\/p>\n\n\n\n<div class=\"wp-block-media-text alignwide has-media-on-the-right is-stacked-on-mobile rkv-gutter-bottom-half\"><div class=\"wp-block-media-text__content\">\n<p>In addition to being heavily influenced by her Japanese heritage\u2014which, she says, fostered \u201cthe way that I see the world, that we want to live with intentionality\u201d\u2014Momos\u00e9 traces her design ethos to a studio course she took as an undergrad in Human Ecology.<\/p>\n\n\n\n<p>An introduction to visual literacy, it was taught by <a href=\"https:\/\/human.cornell.edu\/people\/john-elliott\" target=\"_blank\" rel=\"noopener noreferrer\">John Elliott<\/a>, a professor of human centered design.<\/p>\n\n\n\n<p>\u201cThe way in which he approached design was that you have to have a reason for everything you do,\u201d she recalls. \u201cYou can feel, you can sense, you can study\u2014but if you don\u2019t know <em>why<\/em> you did that, if you can\u2019t articulate it, then maybe it\u2019s superfluous; class=\"rkv-gutter-bottom-quarter\">1 oz. yuzu juice<\/p>\n\n\n\n<p class=\"rkv-gutter-bottom-quarter\">\u00bd oz. Seedlip Garden 108 (a zero-proof botanical spirit)<\/p>\n\n\n\n<p class=\"rkv-gutter-bottom-quarter\">\u00be oz. chilled honey syrup (see recipe below)<\/p>\n\n\n\n<p class=\"rkv-gutter-bottom-quarter\">Splash of ginger beer<\/p>\n\n\n\n<p>1 mint sprig and 1 lemon peel, for garnish<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Directions<\/strong><\/h2>\n\n\n\n<p>Combine lemon juice, yuzu juice, Seedlip, and chilled honey syrup in a cocktail shaker filled with ice. Shake well.<\/p>\n<\/div><\/div>\n\n\n\n<p>Strain into a chilled coupe glass. Top off with ginger beer. Make a small incision in lemon peel and hook mint sprig through it onto side of glass.<\/p>\n\n\n\n<p><strong>To make honey syrup for both recipes<\/strong>: Combine 2 tbs. clover or acacia honey and 1 tbs. hot water in a small bowl.
