How Climate Change Is Impacting Our Diets"},"content":{"rendered":"\n<p class=\"has-large-font-size\">According to a CALS prof, one of the best ways to spur action on the issue is by showing people its effects on what we eat and drink<\/p>\n\n\n\n<p>By <strong>Beth Saulnier<\/strong><\/p>\n\n\n\n<p class=\"has-drop-cap\">When it comes to the nearly endless ways in which climate change is altering our foods, Mike Hoffmann wrote the book on it\u2014literally. And, he says, the reality of how it will impact what\u2019s on our plates\u2014and even in our coffee cups!\u2014may be the most effective way to help the public grasp the broader issues.<\/p>\n\n\n\n<p class=\"rkv-gutter-bottom-quarter\"><strong>It seems obvious, but why should we focus on how climate change affects our food supply?<\/strong><\/p>\n\n\n\n<p>Simply put, we all eat; it\u2019s essential to life. But it\u2019s much more. It\u2019s not only something enjoyable, it\u2019s a unique part of our cultures and our family histories. We need to do everything we can to keep food on the table.<\/p>\n\n\n\n<p class=\"rkv-gutter-bottom-quarter\"><strong>What foods are being impacted?<\/strong><\/p>\n\n\n\n<p>Basically\u2014everything. One has to look hard to find a food that is <em>not<\/em> affected by climate change. <\/p>\n\n\n\n<p>The nutritional quality of some of our staples is in decline. Flavors and aromas of wine grapes are changing. There was a mass die-off of snow crabs in the Bering Sea, because the water warmed. Even the colors of some vegetables are changing.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>One has to look hard to find a food that is <em>not<\/em> affected by climate change.<\/p>\n<\/blockquote>\n\n\n\n<p>Smoke from wildfires obviously affects our health, but it also affects the health of beef and dairy cattle. Droughts in the Southwest have affected grazing land. If you elect to eat beef, their numbers are the lowest they\u2019ve been for 70 years, because climate change has reduced their feed supply.<\/p>\n\n\n\n<p>I was reading the other day that juniper berries\u2014which are used to make gin\u2014are under stress because of drought. Most natural vanilla comes from Madagascar, and it\u2019s experiencing more severe storms.<\/p>\n\n\n\n<p>The list goes on and on. We did a national survey a few years ago. One question was, \u201cAre you concerned that climate change is affecting your food choices?\u201d About 75% of Democrats and 60% of Republicans said yes.<\/p>\n\n\n\n<p>The second question: \u201cWould you be willing to pay more for a food product grown with climate-friendly practices?\u201d Pretty much the same result. The third: \u201cWould you like to know more about how climate change is affecting your food?\u201d Very similar results.<\/p>\n\n\n\n<p>So there\u2019s an audience out there, across the political divide, that we can tap. I\u2019ve given maybe 150\u2013200 talks on climate change\u2014and when I mention coffee, you can almost see the audience lean forward and go, \u201cNo, not my coffee!\u201d Bingo\u2014this hits home.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p> There\u2019s an audience out there, across the political divide, that we can tap.<\/p>\n<\/blockquote>\n\n\n\n<p class=\"rkv-gutter-bottom-quarter\"><strong>Is there a particular food you could point to that, if climate change proceeds unchecked, likely won\u2019t be available 25 or 50 years from now?<\/strong><\/p>\n\n\n\n<p>I frequently get asked this question, and one thing I often cite is cranberries, which are already at risk because of warming winters; without enough chilling, the plants won\u2019t produce fruit the following season. Other crops are moving north\u2014but because cranberries grow in bogs, you can\u2019t just relocate production.<\/p>\n\n\n\n<p>That\u2019s an example of something that could disappear in some places where it\u2019s grown today. But the other part of my answer is that everything is going to continue to get more expensive, because it will be harder to grow.<\/p>\n\n\n\n<p class=\"rkv-gutter-bottom-quarter\"><strong>You mentioned coffee. There are also new diseases and insect pests that are causing havoc around the world.<\/p>\n\n\n\n<p>But the prediction is that because of the changing climate, the area where coffee can be grown will be cut in half, roughly, by the middle of the 21st century. The price is already going up, and it\u2019ll go up more.<\/p>\n\n\n\n<p>Okay; let\u2019s develop new varieties. There are wild types all over the world, growing in little niches where the conditions are perfect. But with climate change, those areas are changing. <\/p>\n\n\n\n<p>So even the wild types you might turn to for drought- or heat-tolerance are at risk.<\/p>\n<\/div><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"rkv-gutter-bottom-quarter\"><strong>In addition to food\u2014as though that weren\u2019t a huge enough topic\u2014are there other sectors being similarly affected?<\/strong><\/p>\n\n\n\n<p>Absolutely. Cosmetics, perfumes, pet food, textiles, pharmaceuticals\u2014these are billion-dollar industries that are all being affected by climate change, because they depend on plants.<\/p>\n\n\n\n<p class=\"rkv-gutter-bottom-quarter\"><strong>So what can the average person do about any of this?<\/strong><\/p>\n\n\n\n<p>Believe it or not, talking about climate change is one of the most important first steps\u2014just having these conversations, starting the dialogue, asking questions. Because we don\u2019t talk about climate change that much; maybe a third of us talk about it occasionally.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>Believe it or not, talking about climate change is one of the most important first steps\u2014just having these conversations, starting the dialogue, asking questions.<\/p>\n<\/blockquote>\n\n\n\n<p>When the U.S. population has been surveyed, about 70% said, \u201cYes, we\u2019re worried about climate change.\u201d But if you ask that same person, \u201cWhat percentage of the people you know are worried about climate change?\u201d the response is \u201cOh, 40%.\u201d<\/p>\n\n\n\n<p>So there\u2019s this huge gap\u2014and food as an elegant mechanism for starting that conversation.<\/p>\n\n\n\n<p class=\"rkv-gutter-bottom-quarter\"><strong>Besides raising awareness, what else can we do?<\/strong><\/p>\n\n\n\n<p>Another big thing is your diet. The way I put it in the book is: treat red meat as a delicacy, not a staple. Most people think, \u201cI suppose I could do that.\u201d Flat-out saying, \u201cDon\u2019t eat red meat\u201d is not going to work for most people.<\/p>\n\n\n\n<p> And when you do something like eating less red meat, tell your friends\u2014because peer pressure is the greatest motivator.<\/p>\n\n\n\n<p><em>(Top: Illustration by Ashley Osburn \/ Cornell University.
