An ice cream inspired by the conversations that flow every day, around the world, over simple cups of tea won Cornell\u2019s annual ice cream competition. Brewing CommuniTea\u2014an Earl Grey tea ice cream with caramel swirls and buttery shortbread pieces\u2014won out over two other flavors in a vote on the Ithaca and Geneva campuses in mid-April.<\/p>\n\n\n\n

Nearly 4,000 students, staff, faculty, and alumni sampled the student-developed ice creams inspired by Cornell\u2019s Freedom of Expression<\/a> theme year.<\/p>\n\n\n\n

\u201cIt\u2019s really empowering to us to know that all of our hard work has paid off, even with the little experience that we do have in food science,\u201d says Madeleine Rodoski \u201927, a food science major in CALS and a member of the winning team, which comprised mostly first-year students. <\/p>\n\n\n\n

\u201cIn the end, we did a pretty good job of combining all of our ideas into one final product.\u201d<\/p>\n\n\n\n

Every year, student teams create ice creams as part of the Science and Technology of Foods introductory class, taught by Chris Loss \u201996, PhD \u201906<\/a>, the Louis Pasteur Lecturer in Food Science.<\/p>\n\n\n\n

Rodoski discovered that the Cornell Dairy Bar<\/a>, where the competing flavors would be served, had never served a tea-oriented flavor before. She came up with the idea for what would become Brewing CommuniTea.<\/p>\n\n\n\n

\u201cShe nailed it right away with the tea, shortbread, and caramel,\u201d says teammate Marcus Iong \u201927. \u201cAnd we never ended up changing that three.\u201d<\/p>\n\n\n\n

The Cornell Dairy Bar had never served a tea-oriented ice cream flavor before.<\/p><\/blockquote><\/figure>\n\n\n\n

The most challenging aspect was getting the proportion of tea flavoring right\u2014and how to deal with shortbread cookie pieces that became soggy when mixed in, says Lucy Clarke \u201927.<\/p>\n\n\n\n

\u201cWe decided to freeze the shortbread beforehand and then mix it in so it kept its composition and it was kind of a little bit more crunchy, which is what we were going for,\u201d Clarke says. \u201cOn our second trial, we basically got it almost perfect.\u201d<\/p>\n\n\n\n

The other finalist flavors were Coming Out of Your Shell\u2014raspberry-citrus ice cream with dark chocolate ribbons, served with a hardened chocolate coating\u2014and Toni S\u2019Morrison, which emulates eating s\u2019mores around a campfire (and pays homage to Nobel laureate Toni Morrison, MA \u201955).<\/p>\n\n\n\n

All three finalists are currently on sale at the Dairy Bar\u2014and the winner will be available during Commencement<\/a> and Reunion<\/a>.<\/p>\n\n\n\n
