It can be crucial for anyone pursuing a career in the hospitality industry.<\/p>\n\n\n\n<p>\u201cWine is a very scary field to look at because you have the viniculture side, the agriculture, the farming part, then you have the knowledge that accompanies knowing how to sit and discuss wine,\u201d says Delesa McCruter \u201925, who took the course last spring. \u201cBecause being a hotelier, a lot of the deals I will probably make in my life will be somewhere at some lounge, some bar, over a glass of wine.\u201d<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow \u201925<\/strong><\/cite><\/blockquote>\n\n\n\n<p>The original Introduction to Wine and Spirits was launched in 1953 by a group of five New York vintners and importers, one of whom, <a href=\"https:\/\/www.nytimes.com\/2006\/01\/01\/nyregion\/julius-wile-dies-at-91-wine-importer.html\" target=\"_blank\" rel=\"noopener noreferrer\">Julius Wile<\/a>, was the course\u2019s first instructor and famously commuted up to Ithaca from New York City once a week for 30 years.<\/p>\n\n\n\n<p>However, the course as it is known today was first taught by the late <a href=\"https:\/\/www.nytimes.com\/1984\/11\/08\/obituaries\/vance-a-christian-55-dies-cornell-teacher-in-hotel-field.html\" target=\"_blank\" rel=\"noopener noreferrer\">Vance Christian \u201961, MS \u201965<\/a>, the Villa Banfi Professor of Hotel Administration and Cornell\u2019s first Black tenured faculty member. <\/p>\n\n\n\n<p>During his 23 years of teaching, Christian modernized the Hotel school\u2019s food and beverage curriculum, and he popped the cork on the wines class, making it available University-wide.<\/p>\n\n\n\n<div style=\"height:15px\" aria-hidden=\"true\" style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>\u201cProfessor Christian had a vision of saying it should not just be for the Hotelies to learn about wine and to be able to have a seat at the table. It should be for every single individual here at Cornell University. And it goes back to Ezra Cornell\u2019s mission of \u2018any person \u2026 any study,\u2019\u201d Stanley says. \u201cSo everyone has equal access and opportunity to learn about the world of wine.\u201d<\/p>\n\n\n\n<p>One thing that hasn\u2019t changed: competition for a seat in the class is fierce. <\/p>\n\n\n\n<p>There were 106 juniors and seniors enrolled in the first class in 1953. The current semester enrollment is about 700 students. The wait list for HADM 4300 is almost as legendary as the class itself.<\/p>\n\n\n\n<p>If taking Intro to Wines is a coveted Cornell tradition, so is teaching it. <\/p>\n\n\n\n<p><\/p>\n\n\n\n<div class=\"wp-block-media-text alignwide has-media-on-the-right is-stacked-on-mobile\"><div class=\"wp-block-media-text__content\">\n<p>Since Christian revamped the course 50 years ago, only two other instructors have led it. <\/p>\n\n\n\n<p>When Christian was diagnosed with cancer, he passed the baton\u2014or, rather, the <a href=\"https:\/\/www.winespectator.com\/articles\/what-is-batonnage-52755\" target=\"_blank\" rel=\"noopener noreferrer\"><em>b\u00e2tonnage<\/em><\/a>\u2014to his former teaching assistant Stephen Mutkoski \u201967, PhD \u201976, in 1983.<\/p>\n\n\n\n<p>Christian died a year later, and Mutkoski taught the class for the next 30 years, shaping it into a more consumer-oriented course. During his tenure, he also eliminated spirits from the curriculum.<\/p>\n\n\n\n<p>Stanley was hired to teach the class in 2013. She hardly needed any introduction to Intro to Wines. People would come up to him in the airport and say, \u2018You were the wines professor; I took your class at Cornell.\u2019\u201d<\/p>\n\n\n\n<p>Wines class students are easy to spot. Each student is served one ounce of each wine, and a typical bottle of wine contains 25.4 ounces. <\/p>\n\n\n\n<p>That works out to roughly 210 bottles a class, or 2,520 bottles for the semester.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>If you\u2019re on campus on a Wednesday, it looks like we have a lot of clarinet players.<\/p>\n<cite><strong>Cheryl Stanley \u201900<\/strong>, wines course instructor<\/cite><\/blockquote>\n\n\n\n<p>Chayil Hyland \u201925, a former wines class teaching assistant who is now taking the class as a student, says learning how to read a wine list and evaluate a wine\u2019s characteristics and knowing what foods it can be paired with, all help increase a person\u2019s \u201ccultural capital.\u201d<\/p>\n\n\n\n<p>\u201cIt\u2019s a really robust class,\u201d Hyland says. \u201cAnd although it\u2019s difficult to get into, once you get in, you\u2019re happy that you\u2019re there.
