In July 2022, the simple-but-tasty meal reached a global audience when it was featured in a <em>Washington Post<\/em> <a href=\"https:\/\/www.washingtonpost.com\/food\/2022\/07\/14\/sandwich-alison-leiby-natasha-pickowicz\/\" target=\"_blank\" rel=\"noopener noreferrer\">food column<\/a>.<\/p>\n\n\n\n<p>\u201cIt\u2019s a salad in sandwich form,\u201d the paper observed, \u201cand it\u2019s a signature of their long-lasting friendship.\u201d<\/p>\n<\/div><\/div>\n\n\n\n<p>Today, Pickowicz is a pastry chef\u2014a three-time James Beard Award finalist with more than 32,000 followers <a href=\"https:\/\/www.instagram.com\/natashapickowicz\/?hl=en\" target=\"_blank\" rel=\"noopener noreferrer\">on Instagram<\/a>. Leiby is a <a href=\"https:\/\/www.imdb.com\/name\/nm7696250\/\" target=\"_blank\" rel=\"noopener noreferrer\">comedian, writer, and producer<\/a> who has worked on Amazon\u2019s \u201cThe Marvelous Mrs. Maisel\u201d and starred in a one-woman show Off-Broadway.<\/p>\n\n\n\n<p>But back in fall 2002, they were newly matriculated Cornellians who met during Orientation Week and immediately hit it off. They\u2019d both go on to major in English in Arts &amp; Sciences; get cut from the Big Red crew team on the same day; and share similar tastes in food, especially when it comes to sandwiches.<\/p>\n\n\n\n<p>The two particularly loved one offering from Cascadeli\u2014the now-departed eatery in Willard Straight\u2014that was loaded with fresh veggies, light on condiments, and made with high-quality turkey.<\/p>\n\n\n\n<p>It\u2019s what they\u2019d always order and, after graduation, make for themselves and each other. Thinking about what food to bring to the beach, Leiby recalls, \u201cIt was like, \u2018Oh, this is <em>our<\/em> sandwich.\u2019\u201d<\/p>\n\n\n\n<p>For her, the main quality that sets it apart is the texture. \u201cSuper crunchy is high on the list,\u201d Leiby notes. \u201cWe both don\u2019t like a sandwich that is overly bready, or has too many spreads on it\u2014so it gets soggy or loses its structure.\u201d<\/p>\n\n\n\n<p>Pickowicz, on the other hand, insists that the high ratio of fresh veggies makes all the difference. <\/p>\n<\/div><\/div>\n\n\n\n<p>She also loves the sandwich\u2019s versatility, since its ingredients can be found in almost any grocery store.<\/p>\n\n\n\n<p>\u201cYou can throw it together,\u201d she observes. \u201cAlthough it can be elevated with fancy focaccia, farmers\u2019 market romaine, or homegrown cucumbers, it doesn\u2019t have to be.\u201d<\/p>\n\n\n\n<p>Fittingly, it was a fellow Cornellian (food writer <a href=\"https:\/\/www.washingtonpost.com\/people\/g-daniela-galarza\/\" target=\"_blank\" rel=\"noopener noreferrer\">G. Daniela Galarza \u201904<\/a>) who featured the friends\u2019 favorite comestible in her \u201cEat Voraciously\u201d newsletter in the <em>Washington Post<\/em>. <\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>We both don\u2019t like a sandwich that is overly bready, or has too many spreads on it\u2014so it gets soggy or loses its structure.<\/p><cite><strong>Alison Leiby \u201906<\/strong><\/cite><\/blockquote>\n\n\n\n<p>She described it as \u201ca sandwich fat as a softball, an explosion of green leaves and sprouts, with a stripe of beige (usually turkey and cheese), a few slices of avocado, and maybe some cucumber or something else with lots of crunch.\u201d<\/p>\n\n\n\n<p>Since Galarza\u2019s story was published, Leiby and Pickowicz have been inundated with questions about the sandwich\u2014with friends and social media followers asking whether they\u2019ve made it right, or if it\u2019s OK to substitute another cheese for cheddar.<\/p>\n\n\n\n<p> \u201cIt\u2019s not like if you don\u2019t have sprouts, it\u2019s not a Friendship Sandwich,\u201d Leiby observes. \u201cYou can customize it however you want. Then pile on the crunchy vegetables: a handful of sprouts, a layer of cucumbers, and\u2014finally, and most importantly\u2014more leafy greens than you think. (Other vegetables are welcome, but the focus should be on raw greens\u2014a lot of them.) For a decadent upgrade, add a slice of crispy bacon.
